Skillet Chocolate Chip Cookie

I am pretty darn confident that this ooey, gooey, rich and chewy chocolate chip skillet cookie recipe will put a smile on your face. It’s rich and decadent, but if you are looking to indulge, you should totally feel happy while doing it. Consider this skillet cookie a judgement free zone, grab a piece of this chocolate goodness and dig in!

The recipe suggests a mixture of dark and milk chocolate, but use what you have or what you like best; dark, milk, semi-sweet, white, or mix it up with butterscotch or peanut butter chips. We won’t judge!

Skillet Chocolate Chip Cookie

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon cayenne
  • ½ teaspoon cinnamon
  • 1 cup unsalted butter at room temperature
  • 1 cup packed brown sugar
  • ¾ cup sugar
  • 1 large egg at room temp
  • 2 large egg yolks at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup dark chocolate chips plus 2 tablespoons for sprinkling on top
  • 1 cup milk chocolate chips
  • 1 teaspoon flaky sea salt

Instructions
 

  • Preheat the oven to 350°F
  • Add the flour, baking powder, baking soda, salt, cayenne, cinnamon to a mixing bowl and whisk to combine. Set aside.
  • Using a stand mixer or hand mixer, cream together the butter with the sugar and brown sugar.
  • Add the egg, blend to mixed in, then add the egg yolks and mix in. Next, add the vanilla extract and beat until combined.
  • Add the flour mixture in, a little at a time, and mix until the dough comes together.
  • Add the 1 cup of dark chocolate and the 1 cup of milk chocolate and use a spatula to mix in the chips to the dough.
  • Scrape the dough into the skillet, and use the spatula to spread it out evenly across the skillet. Then sprinkle it with the sea salt.
  • Bake the cookie for 15 minutes, then sprinkle the 2 tablespoons of dark chocolate chips across the top. Turn the skillet 180° in the oven, the cook 15 -20 to minutes more until the centre is just barely cooked.
  • Remove it from the oven and allow it to cool for 10-15 minutes before serving.
  • Serve topped with ice cream and chocolate sauce (optional, but highly recommended).

Buttermilk Waffles

Fresh homemade waffles are an absolute treat for breakfast, brunch (Air Fryer Chicken with Buttermilk Waffles), or even dessert! Simply served with syrup or on a platter with fresh berries, cara cara oranges, thick cut bacon, fried eggs and local maple syrup. These waffles are sure to please the young and the young at heart.

I don’t make them often, so when I do, I make a double batch. They freeze really well, so just pop a couple in the toaster for a super quick breakfast.

Preparing this classic brunch combination in your own kitchen is easier than you may think.   • 1 Electric hand or stand mixer

Ingredients
  

  • 3 large eggs separated‬‬
  • 1¾ cup buttermilk‬‬
  • ½ cup no salt butter, melted‬‬ (1 stick)‬‬
  • ½ teaspoon pure vanilla extract‬‬
  • 1¾ cups flour‬‬
  • 1½ teaspoon baking powder‬‬
  • 1 teaspoon baking soda‬‬
  • ½ teaspoon salt‬‬
  • ⅓ cup sugar‬‬

Instructions
 

  • ‪‪Chill a stainless-steel bowl and the whisk attachment of a hand blender in the freezer.
  • Preheat waffle iron on medium high heat.
  • ‪In a bowl, whisk together the flour, baking powder, baking soda,‬ salt, and sugar.
  • ‪In a large bowl, whisk the egg yolks, then add in the buttermilk, butter and vanilla, whisk well to combine.
  • Add the‬ flour mixture, a little at a time, to the egg mixture and continue whisking until the batter is smooth.
  • ‪Remove the bowl and whisk from the freezer and add the egg whites to the bowl. Using an electric hand mixer, whisk on high until the egg whites form stiff peaks. Then, using a rubber spatula, gently fold in the egg whites into the batter. Cover the batter with plastic wrap and let sit at room temperature for 30 minutes.
  • Lightly spray or brush the waffle iron with oil. Then spoon batter into the middle of each well of the waffle iron and close‬ the lid.
  • Cook the waffle‬ until golden brown and slightly crisp, about 4-5 minutes.
  • Remove the waffles to a cooling rack placed on a baking sheet and keep warm in a 200F oven.
  • Repeat process: oil, batter, cook… until all the batter is done.

Ambrosia Apple Pie

‘Heartwarming’ perfectly describes this Ambrosia Apple Pie… with the intoxicating aroma of baked apples, cinnamon, nutmeg and brown sugar, it’s sure to transport you to a cozy & happy place!

Celebrating #PiDay or any fall day with an Ambrosia apple pie… an apple lover’s pie, with a short crust pasty. Be well my friends!

Short crust Pastry

Ingredients
  • 2 ¼ cup all-purpose flour
  • ¼ tsp salt
  • ¾ cup cold unsalted butter, cubed
  • 8 tbsp ice water, approximately

Preparation

In a food processor, combine the flour and salt. Add the butter and pulse for a few seconds at a time until the butter is the size of peas. Next, add the water and pulse again until the dough just begins to form. Add water as needed. Remove the dough from the food processor and form two discs.

Cover in plastic wrap and refrigerate the dough for at least 30 minutes.

Roll out the dough on a floured work surface 1/8-inch thick sheet.

* too little water will cause a crumbly texture making it difficult to roll out a sheet of pastry without cracks

Ambrosia Apple Pie Filling

Ingredients
  • 12 cups peeled & sliced Ambrosia apples (about 9 apples – sliced 1/4-inch thick)
  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tbsp rolled oats
  • 1 egg mixed with 2 tbsp water, for brushing
  • sugar and cinnamon, for sprinkling

Pie Preparation

Preheat the oven to 400°F.

Toss the sliced apples with the lemon juice. Place half of the apples in a sauté pan or saucepan and heat over medium heating, until some of the juices cook out and the apples soften, about 10 minutes. Remove the apples from the pan using a slotted spoon and stir with the remaining uncooked apples to cool.

In a large bowl toss the sliced apples with the granulated sugar, brown sugar, cinnamon, nutmeg & salt to blend, then mix in the lemon juice and set aside.

Dust a 9-inch pie plate with flour and line the plate with the rolled-out pastry. Sprinkle the bottom of the shell with the oats so that they will help absorb any excess juices. Spoon the apple filling into the shell. If using a full crust, place the second rolled-out pastry over the apples. Trim any excess dough and pinch the edges of the crust together to create a fluted edge. Brush the pastry with the egg wash. Stir a little sugar and cinnamon together and sprinkle generously overtop. Lastly, use scissors to snip opening in the top crust to allow steam to escape.

Optional – use pie dough cutters to create fun shapes and adorn the pie in a creative manner unique to you! Then brush with the egg wash and sprinkle with sugar/cinnamon mixture.

Place the pie on a parchment-lined baking tray and bake for 10 minutes at 400°F. Reduce the oven temperature to 375 °F and continue to bake for another 45 to 60 minutes, until the crust is golden brown and the filling is bubbling.

Cool the pie for at least 2 hours before slicing to serve.

Grilled Peaches with Crumble

Grilled peaches with crumble is such an easy and delicious dessert, it’s my summer go-to! They can be made in front of your guests by the grill and they take no time at all to assemble. My wife claims any leftovers are also fantastic for breakfast! 😉

Ingredients
  • 4 medium peaches, halved and pitted
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt grinder (or shaker)
  • 2 teaspoons light brown sugar
  • 1 cup whole grain granola
  • Vanilla ice cream for serving
Preparation

Preheat the grill to medium heat (approximately 350°F)

Mix brown sugar with granola and set aside.

Lightly brush the cut side of each peach with olive oil and balsamic, then give one light grind (or shake) of salt from height. Let stand for 5 minutes.

Place peaches cut side down on grill. Grill covered, for 8-10 minutes or until peaches are tender and begin to caramelize.

Place grilled peaches in individual serving dishes and sprinkle with crumble. Serve with ice cream (or thick yogurt).

* Peaches are best to grill when just having ripened… over ripe peaches are not suited for grilling.

In Ontario, peaches are at their peak of freshness in June, July and August.

Perfectly cooked carrots, flavoured with a hint of spice, a pop of freshness and drop of sweetness.
Whether served as an appetizer or a side, this dish is sure to impress. The sous-vide carrots retain their natural sweetness, while soaking up all the flavours of the other ingredients. The slight spiciness is tempered by the creamy hummus.

Full disclosure… this has been our dinner-for-2, on more than one occasion. That is how seriously good it is!

Grab your skillet, fire up the grill, it is Nation Grab your skillet, fire up the grill, it is National Filet Mignon Day, time to eat well! 

There are many ways to cook a filet mignon, but a reverse sear is my choice for a thicker cut of meat like these filet mignons.
A reverse sear is an ideal way to ensure consistency of your finished cook and avoid that terrible feeling of cutting into an overcooked (and expensive) steak! Simply start by cooking your steaks at a low temperature (200°F) until they are close to done. Then sear them on a scorching hot grill or skillet to finish.

I used the @HestanCulinary NanoBond Titanium Skillet to slow cook the filets then finished on the @HestanHome grill so that I could sear my smashed potatoes in the beef and rosemary drippings (I don’t waste those tasty drippings). The NanoBond is also ideal for searing the steak as it is heat tolerant to 1050°F and creates a beautiful crust on the surface of the filet.

Beef Ribs with Salsa Verde. It is said that we eat Beef Ribs with Salsa Verde.
It is said that we eat with our eyes first and these gorgeous Beef Ribs with Salsa Verde alongside a loaf of crusty, garlic bread is meal that will bring joy from beginning to the very end!
 
The secret to these tender, mouth-watering ribs is to start with local Canadian Beef, then cook them low and slow in the oven first. Season them well, wrap them tight and toss them in the oven for 3.5 hours. Then finish them off with a char on a hot grill. It is really that simple!

Remove the ribs from the grill and rest them, meat side down, on a board sauce of bright, herbaceous Salsa Verde. The beef’s juices mix with the mint, parsley, charred green onions, & lemon juice, to create something magical. Once sliced, the ribs get drizzled with more of the flavourful salsa, the perfect balance to the rich, charred ribs.

I highly recommend you mop up the salsa, juices, and bits of meat left on the bottom of your plate with a slice (or two) of Furlani Garlic Bread. Oh, so good!

I have one last ingredient that they have asked me to grill with, which I will be posting at the beginning of September.
