Grilled veggies are perfect as a side with grilled meats, fish, or poultry. They also make a delicious vegetarian main course served in grain bowls, pastas, salads, sandwiches and wraps to just name a few.

Grilling veggies on skewers offers several advantages:
1. Even Cooking
Skewering vegetables allows them to cook more evenly on the grill. By threading them onto a skewer, you ensure that each side of the vegetables come into contact with the grill’s heat, resulting in uniform cooking and consistent doneness.
2. Prevents Falling Through Grates
Small or irregularly shaped vegetables can easily fall through the grill grates when cooked directly on the grill. Skewering them keeps them secure and prevents them from slipping through, ensuring that you don’t lose any precious veggies to the flames.

Skewers provide a convenient way to handle and flip the vegetables on the grill. Instead of using tongs to individually turn each piece, you can simply grab the skewer (with a cloth or oven proof mit) and rotate it, making the grilling process easier and more efficient.

- Zucchini
- Mini peppers
- Jalapeño
- Red onion
- Mini potatoes
- Olive oil
- Salt and pepper, to taste
Equipment
7-10 wooden or metal skewers. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent them from burning on the grill.
Instructions
Par boil the Potatoes
Boil the potatoes for 8 minutes, drain the water and set aside.
Prepare the Vegetables
Wash and chop the vegetables. Try to cut them into uniform sizes on each skewer, so they cook evenly on the grill.
Preheat the Grill
Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent them from burning on the grill.
Assemble the Skewers
Thread each vegetable onto separate skewers or alternate between different types of vegetables for a colourful presentation that will be served left on the skewer. Leave a little space between each piece to ensure even cooking.
Drizzle the skewers with oil and season with salt & pepper.

Grill the Skewers
Place the assembled skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, or until the vegetables are tender and slightly charred.


Serve and Enjoy
Once the vegetables are grilled, remove them from the skewers and transfer them onto a serving platter. Sprinkle with additional salt and pepper if desired.
