Ingredients
- Red seedless grapes
- Olive oil
- Kosher salt
- Fresh thyme leaves
- Brie
- Baguette
- Olive oil
- Honey
Instructions
Preheat the grill to 400ºF, only light one side of the grill.
Spread grapes into a cast iron pan or skillet. Drizzle with olive oil. Sprinkle with salt and thyme leaves. Toss gently to mix.
Place Brie into a second cast iron pan.
Place both pans on the unlit half of the grill for 8-10 minutes or until grapes just begin to burst and Brie begins to ooze.
Meanwhile, brush the bread with olive oil. When the Brie and grapes are just about ready, grill the bread over direct heat about 1 minute per side.
Assemble the crostini. Spread brie over bread, top with roasted grapes and drizzle with honey.
Serve immediately and enjoy!

- 1 tablespoon olive oil
- ¼ teaspoon kosher salt
- 2 teaspoons fresh thyme leaves
- 1 8oz Brie wheel 226g
- Fresh baguette cut ½ thick, sliced on a diagonal – 12 to 14 slices
- Olive oil to drizzle
- Honey to drizzle
