Air-Fried Everything Pigs in a Blanket (Made in the Joule™ Oven Air Fryer Pro)

Elaine and I were discussing ideas for some quick, easy, and most importantly, tasty appetizers to put out for NYE. So, Elaine went straight to the Breville Joule™ Oven App and searched appetizers. Scrolling down this Williams Sonoma Test Kitchen recipe caught her eye. It checked all the boxes, it was super quick, incredibly easy and the combination of honey-mustard and Everything Bagel seasoning sounded tasty!

Once the cocktail sausages were rolled with the honey-mustard sauce in the strips of puff pastry, the rolls were sprinkled with Everything Bagel seasoning and tossed in the fridge until it was time to cook them. All that was left to do was tap the “Start preheat” button on the app and the Joule™ Oven Air Fryer Pro took over. Air fried at 400°F for 8 minutes, then I tapped the “A Bit More” button, to brown them just a bit more.

Flakey, flavourful, fabulous! This recipe makes 12 pigs in a blanket, but we highly recommend you double, if not triple the recipe!

These make ahead Air-Fried Everything Pigs in a Blanket would also make a fantastic game day snack!

Ingredients for pigs in a blanket

Honey mustard sauce:

  • Honey
  • Yellow mustard
  • Dijon mustard
  • Mayonnaise
  • Apple cider vinegar
  • Pinch of cayenne pepper optional

For the Pigs:

  • Cocktail sausages 
  • Puff pastry, thawed
  • Egg
  • Everything Bagel Seasoning
  • *Avocado oil or canola oil cooking spray

Optional:

  • Hot mustard

Puff pastry tips: 

Work quickly. If the puff pastry starts getting warm it becomes harder to use and will not puff up as nicely. Simply place pastry back into the fridge for 5-10 minutes, then continue rolling and wrapping the pigs.

Ingredients
  

For the honey mustard sauce:

  • 2 tablespoons honey
  • 1 tablespoon yellow mustard
  • 1 tablespoon Dijon mustard
  • 1 teaspoon mayonnaise
  • ½ teaspoon apple cider vinegar
  • Pinch of cayenne pepper optional

For the Piggies:

  • 12 cocktail sausages patted dry
  • 1 sheet puff pastry thawed
  • 1 egg lightly beaten (for the egg wash)
  • 1 tablespoon Everything Bagel Seasoning
  • *Avocado oil or canola oil cooking spray (only If you are using a air fry basket)

For serving, optional

  • Hot mustard

Instructions
 

  • Prepare the honey mustard sauce. In a small bowl, stir together the honey, both mustards, mayonnaise, vinegar, and cayenne until smooth. Cover and refrigerate until ready to use.
  • Roll and cut puff pastry. On a lightly floured work surface, gently roll out or trim the puff pastry (depending on its original size) into an 8-by-12-inch rectangle. Then cut into 12 rectangles, each 2 by 4 inches.
  • Tip: Work quickly. If the puff pastry starts getting warm it becomes harder to use and will not puff up as nicely. Simply place pastry back into the fridge for 5-10 minutes, then continue to work with it.
  • Assemble. Spoon a 1/2 teaspoon honey-mustard sauce in the middle of the puff pastry rectangle and place a cocktail sausage on top. Brush both ends of the pastry with a little beaten egg. Tightly roll the puff pastry around the sausage and press to seal. Place rolled piggy’s seam side down, on the sheet pan lined with parchment paper. Repeat to make the remaining pigs in a blanket.
  • Sprinkle Everything Bagel seasoning and chill: Brush the tops of the rolled pigs in a blanket with the remaining beaten egg and sprinkle with the everything bagel seasoning. Refrigerate, uncovered, for 30 minutes, or cover and refrigerate up to overnight.
  • Tip: The pigs in a blanket can be wrapped tightly in plastic wrap and frozen up to 3 days.
  • Preheat air fryer to 400°F. Insert wire rack to position 8, (*If you are using a fry basket spray pigs with oil.)
  • Air Fry. Remove chilled pigs in a blanket from the refrigerator. Place pigs in a blanket, seam side down, in a single layer in the fry basket, making sure the seam is sealed to prevent the pastry from expanding during frying. Insert the basket into rack position 3 and start the timer for 8 mins.
  • Tip. Leave some space between each one to promote a constant flow of air, which will maximize crispness.
  • Check if it’s ready. Cook until the pastry is crisp, flaky, and golden brown if not give it a bit more time, approximately 4 minutes.
  • Tip: We also rotated the pigs at this point from the front to back.
  • Serve and enjoy. Remove piggies from the basket. Serve with the remaining honey mustard sauce and a hot mustard.

Twice-Baked Potatoes with Cauliflower and Cheese

Twice-Baked Potatoes with Cauliflower and Cheese (Made in the Joule™ Oven Air Fryer Pro)

As someone who is still relatively new to the world of Air Frying and the concept of a Smart Ovens, I must admit, I have really enjoyed testing and cooking with the Breville Joule™ Oven Air Fryer Pro!
At first glance, it is an attractive, well designed countertop appliance. Exactly what you would expect from Breville.

Look a little closer and you will see that this oven has 13 functions (Toast, Bagel, Bake, Air Fry, Broil, Roast, Pizza, Cookies, Proof, Reheat, Slow Cook, Keep Warm, Dehydrate) to tackle everything from simply toasting a bagel, to roasting a whole chicken.

But it was when I dug into the “smart” features, that the fun really began. Joule™ Autopilot is exclusive to the Joule™ Oven Air Fryer Pro in conjunction with the Joule™ Oven App, which makes for a stress-free cooking experience. Some recipes change cooking modes midway through the process and that is where the Joule™ Autopilot takes over to automatically make those changes.

Their app has over 200 well tested recipes that take you step-by-step through the process and deliver impressive results the first time for each recipe. We don’t use Alexa or Google Assistant, but this oven has that functionality built in as well.
The oven comes with all the accessories you need to start cooking straight out of the box: 13’’ non-stick pizza pan; Wire racks (x 2) – Reversible for 8 different rack positions; 9” x 13” broiling rack; 9’’ x 13’’ enamel roasting pan; Air fry/dehydrate basket.

The Breville Joule™ Oven Air Fryer Pro is so easy to use, Elaine joked that even she could cook dinner… I really hope she does not replace me with a smart oven!

Twice Baked Potatoes with Cauliflower and Cheese

If you get the chance, you must try these Twice Baked Potatoes with Cauliflower and Cheese.

After the app walked me step-by-step through the process of cooking the potatoes, then making the filling, I popped them back in the oven for the last leg of cooking. That is when the oven took over with the Autopilot flight plan, which baked the potatoes for 15 minutes, then automatically switched cooking modes to broil them on medium heat for 2 minutes without me having to monitor the cooking or manually adjust the mode (this also prevents heat loss during those moments between manually switching modes). In the end we were left to enjoy these twice baked potatoes with perfectly crispy skin and a fluffy, flavourful filling.

  • 1 Joule™ Oven Air Fryer Pro

Ingredients
  

  • 4 large baking potatoes like russets
  • 1 teaspoon olive oil
  • Kosher salt
  • 1 small head of cauliflower cut into florets
  • 3 cups milk
  • 2 bay leaves
  • 4 tablespoons unsalted butter
  • 1 cup grated Parmesan cheese.

Instructions
 

  • Preheat the oven. Insert the wire rack into the position 6 and set oven to 425°F Bake. While the oven heats, continue to the next step.
  • Prepare the potatoes. Scrub the potatoes under running water; dry them and rub the skin of each with the oil and a little salt. Pierce the skin of each in three or four places with the tines of a fork. Transfer potatoes to a sheet pan.
  • Bake potatoes. Place the sheet pan in the preheated oven and start the timer.
  • Cook the cauliflower. While the potatoes are baking, put the cauliflower into a saucepan set over medium-high heat, and add the milk and bay leaves. Heat until almost boiling, then reduce the flame to low, and simmer until tender, approximately 20 minutes.
  • Check if it is ready. Bake until the potatoes offer no resistance when a knife is inserted in their centers. If not, give it a bit more time.
  • Make the filling. When the potatoes are done, remove them from the oven, slice them open down the middle and use a spoon to scrape out their flesh into a bowl. Add the butter, the cauliflower and a healthy splash of the milk, and mash to combine.
  • Stuff the potatoes. Spoon the mixture back into the empty jackets, place on a baking sheet and shower with cheese.
  • Preheat. Insert the wire rack into position 6 and set oven to 425°F Bake. When the oven heats, continue to the next step.
  • Bake. Return to the oven and start the timer.
  • Check if it is ready. Bake until the cheese is melted and golden. If not give it a bit more time.

Optional, garnish with chives.

I’ve seen several loaded hummus posts, so I decided it was time to put my own spin on it!

Homemade hummus base. Topped with red onions, tomatoes, pickled mushrooms, kalamata olives, pickled jalapeños, fresh parsley, crispy chickpeas (cooked in the air fryer) and Harissa spiced sausage balls.
I used a hot fennel plus hot Italian sausages, mixed with pepper, harissa, parsley , cilantro, panko and eggs for these easy, flavour packed sausage balls.

Served with pita or flatbread to dip or make a mouth-watering wrap!

Seriously, this was a perfectly balanced platter. Ideal for a party appetizer or a grazing board for the family!

Loaded Hummus with Air Fryer Harissa Sausage Balls

  • 1 Air Fryer

Ingredients
  

Sausage balls

  • 450 g 1 lb hot fennel sausages (casing removed)
  • 450 g 1 lb hot Italian sausages (casing removed)
  • 1 teaspoon black pepper
  • 1 teaspoon harissa spice
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • ⅛ cup fresh parsley chopped
  • ⅛ cup fresh cilantro chopped
  • Olive oil – to lightly spray or brush on meatballs 4 teaspoons liquid – optional

Hummus

  • 2 cups canned chickpeas liquid reserved
  • ½ cup tahini
  • ¼ cup extra-virgin olive oil plus extra for drizzling (optional)
  • 3 cloves roasted garlic optional
  • Salt and freshly ground black pepper to taste
  • Juice of 1 lemon plus more as needed

Chickpeas

  • 1 cup canned chickpeas rinsed and dried
  • 1 teaspoon olive oil
  • ¼ teaspoon of salt or to taste

Instructions
 

Hummus

  • Put everything in a food processor (I use a Vitamix) and begin to process; add the chickpea liquid as needed to allow the machine to produce a smooth puree.
  • Taste and adjust the seasoning (add more lemon juice if desired)

Chickpeas

  • Toss with olive oil to coat and a sprinkle of salt.
  • Cook in the air fryer at 400 for 12 mins, shake two to three times.
  • Remove to a plate and set aside until ready to use.

Sausage Balls

  • In a large bowl, mix sausage, pepper, eggs, breadcrumbs, parsley, and basil.
  • Form 3 cm (1 ¼ inch) sausage balls (approximately 28.5 g/1 oz) and place on a baking sheet. Lightly spray or brush a little olive oil on each meatball, then reshape with your hands to ensure the oil coats the entire ball. (The olive oil is optional but helps create a crispier golden exterior)
  • Preheat air fryer to oven to 400°F.
  • Bake in batches for 8 minutes at 400°F, shaking the meatballs halfway through.

Assemble & Serve

  • First layer the hummus on a platter. Stack the meatballs in the middle of the hummus, then add an assortment of your favourite fresh and pickled vegetables, herbs and crispy chickpeas around the platter.
  • Served with pita or flatbread to dip or make a mouth-watering wrap.

Notes

  • Sausage balls can also be baked in an oven at 400°F (on the parchment lined baking sheet – middle rack) for 10-12 minutes, shaking the pan 2-3 times for even cooking.
  • Serves 6-8 people as an appetizer, or 4 for a meal.

Preparing this classic brunch combination in your own kitchen is easier than you may think. All it takes is a little planning, an air fryer, and a waffle maker, to turn your table into the hottest brunch spot in your neighbourhood. Serve with honey, hot sauce and a side of slaw for the ultimate brunch plate!

Crispy on the outside, moist tender and juicy on the inside… what more do I have to say?

Oh, it is also a healthier option than the deep-fried version!

Ingredients
  

For the marinade

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 2 cups buttermilk
  • 2 tablespoons hot sauce
  • 3 springs of fresh thyme
  • 1 teaspoon black pepper

For the breading

  • 1 cup flour
  • ½ cup corn starch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • Olive oil

Make ahead

  • 8 -12 Buttermilk Waffles

Instructions
 

  • Place the chicken and marinade ingredients in a resealable bag, squeeze out excess air, seal the bag and shake to combine. Marinate for 4 to 24 hours.
  • In a shallow bowl or small baking tray, whisk the flour, corn starch, and spices together.
  • Remove the chicken pieces directly from the bag and dredge in the flour mixture. Once each piece is completely coated, place on a cooling rack and let rest for 15 minutes.
  • Preheat the air fryer to 380F.
  • Generously spray (or dab with a brush) the chicken all over with oil. It is important to coat all the breading to create a crispy crust.
  • Place the 4 chicken thighs in the preheated air fryer, leaving space between the thighs.
  • Set the air fryer to 380F for 24 minutes and start. After 12 minutes, flip the chicken and lightly spray the other side with oil. Continue cooking for 10-12 minutes or until the chicken is golden and the internal temperature reaches 165°. Remove the thighs to a cooling rack
  • Repeat the process with the chicken drumsticks.
  • While the drumsticks rest on the cooling rack, reheat the thighs for 3-4 minutes in the air fryer then serve hot with the waffles.

Air Fryer Sausage Meatballs

The keys to delicious meatballs are the perfect balance of fat content to meat, and seasoning that does not overpower your taste buds, but leaves you craving another meatball… then another…

Using the combination of Grimm’s Spicy Italian & Bratwurst Sausages, solves both those challenges and takes the guesswork out of meatball preparation. Simply remove the casing, toss them in a bowl with a couple of eggs, panko & fresh herbs, roll into balls and before you know it, you are enjoying The Ultimate Meatballs!

These meatballs are sooooo delicious on their own but create the perfect festive treat when served with orange-jalapeño-cranberry sauce and baguette rounds!

To avoid disappointment, make extra! We doubled the recipe!

Air Fryer Sausage Meatballs

The keys to delicious meatballs are the perfect balance of fat content to meat, and seasoning that does not overpower your taste buds, but leaves you craving another meatball… then another…
Using the combination of Grimm’s Spicy Italian & Bratwurst Sausages, solves both those challenges and takes the guesswork out of meatball preparation. Simply remove the casing, toss them in a bowl with a couple of eggs, panko & fresh herbs, roll into balls and before you know it, you are enjoying The Ultimate Meatballs!
These meatballs are sooooo delicious on their own but create the perfect festive treat when served with orange-jalapeño-cranberry sauce and baguette rounds!
To avoid disappointment, make extra! I doubled the recipe!

Ingredients
  

  • 450 g 1 lb Grimm’s Spicy Italian Sausage (casing removed)
  • 450 g 1 lb Grimm’s Bratwurst Sausage (casing removed)
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1/8 cup fresh parsley chopped
  • 1/8 cup fresh basil chopped
  • Olive oil – to lightly spray or brush on meatballs 4 teaspoons liquid – optional
  • Orange-Jalapeño-Cranberry sauce:

Orange-Jalapeño-Cranberry sauce:

  • 2 large jalapeños charred, seeds removed, and finely diced
  • 1 tablespoon white balsamic vinegar
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoons rosemary finely chopped
  • 1/2 cup water
  • 1 tablespoon orange zest
  • 12 oz package fresh or frozen cranberries (3 cups)

Instructions
 

  • In a large bowl, mix sausage, pepper, eggs, breadcrumbs, parsley, and basil.
  • Form 3 cm (1 ¼ inch) meatballs (approximately 28.5 g/1 oz) and place on a parchment lined baking sheet. Lightly spray or brush a little olive oil on each meatball, then reshape with your hands to ensure the oil coats the entire ball.
  • Preheat air fryer to oven to 400°F.
  • Bake in batches for 8 minutes at 400°F, shaking the meatballs halfway through.
  • Serve with orange-jalapeño-cranberry sauce (instructions below) and baguette rounds for a delicious holiday appetizer.

Notes:

  • For crispier meatballs cook for an additional 2 minutes.
  • The olive oil is optional but helps create a crispier golden exterior.
  • Make extra to use on your favourite pasta or enjoy a mouth-wateringly good meatball sandwich!
  • Meatballs can also be baked in an oven at 400°F (on the parchment lined baking sheet – middle rack) for 10-12 minutes, shaking the pan 2-3 times for even cooking.

Orange-Jalapeño-Cranberry Sauce:

  • Char the jalapeños directly on a grill, gas stove burner or on a hot griddle pan. Remove jalapeños, place in a small bowl and cover with plastic wrap or a plate. Let steam for about 5 minutes. Using a paper towel wipe off charred skin, slice in half, remove seeds and finely dice.
  • To prepare the cranberry sauce add the white balsamic vinegar, sugar, jalapeños, salt, and rosemary in a heavy-bottomed saucepan over medium-high heat, stir to combine. Add water, then stir with a wooden spoon until sugar is dissolved, reduce heat to low and simmer 2 minutes.
  • Add orange and cranberries, increase heat to medium-high and bring to a boil.
  • Reduce heat to medium and boil gently for 10 minutes, stirring occasionally until cranberries have softened.
  • Spoon sauce into a bowl(s), cover and cool at room temperature. Refrigerate until serving time. Makes 2 cups

Notes:

  • Use a larger pot than needed and watch the cranberries to avoid them boiling over and making a mess.
