Ingredients
For the Fajitas
- Flank steak
- Green bell pepper
- Red bell pepper
- Yellow bell pepper
- Red onion

Fajita Seasoning
- Chili powder
- Garlic powder
- Onion powder
- Paprika
- Salt
- Oregano
- Black pepper
Chipotle Sauce
- Greek yogurt
- Mayonnaise
- Chipotle peppers from a can of chipotles in adobo sauce
- Garlic
- Lime juice
- Avocado oil
- Honey
- Sea salt
- Black pepper
- Smoked paprika
- Fresh parsley
- Fresh cilantro
- Red pepper flakes
For Serving
- Flour tortillas, 5-inch
- Chipotle Sauce
- Guacamole (recipe or store-bought)
- Pico de Gallo (recipe or store-bought)
- Fresh cilantro

Instructions
Prepare the Flank Steak
Score the surface of the steak (on one side) before cooking to help the absorption of the marinade. Run your knife diagonally across the surface of the steak, in a diamond pattern. Make the slices about ¼-inch deep, and space them roughly 1-inch apart. Drizzle the steak on both sides with olive oil.
In a small bowl, mix the fajita seasoning ingredients.
Rub ½ of the seasoning evenly onto both sides of the flank steak. Let it marinate while you prepare the chipotle sauce.
Make the Chipotle Sauce
Combine all the chipotle sauce ingredients in a blender or food processor. Blend until smooth and creamy.
Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C).
Cook the Steak
Place the seasoned flank steak in the air fryer basket. Cook for about 8-10 minutes, flipping halfway through, until it reaches your desired level of doneness. Remove at 129°F internal temperature for medium rare and let it rest while the vegetables are cooking. Our steak continued to 136°F.
Cook the Vegetables
After removing the steak, place the onions in the air fryer basket and spray with cooking oil. Cook for 2 minutes then add in the remaining vegetables. Cook for 8 minutes, shaking the basket halfway through or until they are tender.
Assemble the Fajitas
Warm the flour tortillas in the microwave or on a skillet.
Spread a spoonful of chipotle sauce on each tortilla. Top with slices of flank steak, the cooked vegetables, guacamole, pico de gallo, and fresh cilantro. Serve the fajitas immediately with extra chipotle sauce on the side.

- 1 small red onion sliced into ¼” strips
- 1 medium jalapeño thinly sliced into circles
- Olive oil spray
Fajita Seasoning
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon oregano
- ½ teaspoon black pepper
Chipotle Sauce
- ½ cup plain Greek yogurt
- ¼ cup mayonnaise
- 4 chipotle peppers from a can of chipotles in adobo sauce
- 1 garlic clove minced
- 1 tablespoon fresh lime juice
- 1 teaspoon avocado oil
- 1 teaspoon honey
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- ¼ teaspoon smoked paprika
- ½ teaspoon fresh parsley chopped
- ½ teaspoon fresh cilantro chopped
- ½ teaspoon red pepper flakes
