They’re my go-to recipe for any occasion—whether I’m serving them alongside grilled meats, pairing them with a hearty salad, or enjoying them straight from the pan (no shame!). Once you try these addictive potatoes, you’ll see why they’re always in my rotation!
What is Bomba Sauce?
Bomba sauce is an Italian chili condiment made from crushed Calabrian peppers, olive oil, and a blend of spices. Known for its vibrant flavour and balanced heat, it adds a spicy, tangy, and savory depth to dishes. Trader Joe’s sells a bomba sauce, you can find it in Italian specialty stores or the international aisle of most supermarkets.
Ingredients
- Fingerling potatoes
- Bomba Sauce
- Olive oil (or neutral cooking oil)
- Finishing salt

Instructions
Boil the Potatoes
Place the fingerling potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce heat to a simmer and cook for 11 minutes, or until fork-tender.
Prepare the Potatoes
Drain the potatoes and let them cool slightly until easy to handle. Slice each potato diagonally into three pieces.
Toss with Bomba Sauce
In a large mixing bowl, toss the sliced potatoes with the Bomba Sauce, ensuring all pieces are evenly coated.
Crisp the Potatoes
Heat the olive oil in a large sauté pan or skillet over medium heat. Add the potatoes in a single layer (work in batches if needed) and cook for 5-7 minutes, stirring occasionally, until they are golden and crispy on the edges.
Season and Serve
Finish with Maldon salt, optional. Serve hot and enjoy!
