Bomba Potatoes
Meet your new favourite side dish: Bomba Potatoes! With crispy edges and a pillowy interior, these golden bites are packed with flavour, thanks to the bold, tangy, and spicy kick of Bomba sauce. They're my go-to recipe for any occasion—whether I’m serving them alongside grilled meats, pairing them with a hearty salad, or enjoying them straight from the pan (no shame!). Once you try these addictive potatoes, you’ll see why they’re always in my rotation!
Ingredients
- 1 lb fingerling potatoes
- 3 tablespoons Bomba Sauce adjust to taste
- 2 tablespoons olive oil or neutral cooking oil
- Maldon salt optional
Instructions
Boil the Potatoes
- Place the fingerling potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce heat to a simmer and cook for 11 minutes, or until fork-tender.
Prepare the Potatoes
- Drain the potatoes and let them cool slightly until easy to handle. Slice each potato diagonally into three pieces.
Toss with Bomba Sauce
- In a large mixing bowl, toss the sliced potatoes with the Bomba Sauce, ensuring all pieces are evenly coated.
Crisp the Potatoes
- Heat the olive oil in a large sauté pan or skillet over medium heat. Add the potatoes in a single layer (work in batches if needed) and cook for 5-7 minutes, stirring occasionally, until they are golden and crispy on the edges.
Season and Serve
- Finish with Maldon salt, optional. Serve hot and enjoy!
