Instructions
Peel and Cut the Peaches
Cut the unpeeled peaches in half along the seam and twist to separate. (Using freestone peaches makes pitting effortless, as the pit pops right out without tearing the fruit). The fuzzy skin provides traction, making them much easier to pit than peeled peaches. Once pitted, peel the skin away using a sharp vegetable peeler or pairing knife. Cut the flesh into ⅓-inch dice to yield roughly 5 cups (750 to 800 g) of fruit. Do not add sugar to the raw peaches ahead of time, as this draws out moisture and prevents proper browning.
➡️TIP: If the peaches are exceptionally ripe and difficult to peel without removing too much flesh, they may instead be blanched in boiling water for 30 seconds and transferred to ice water before peeling. Dry them thoroughly before cutting and cooking.

Caramelize the Peaches
Melt the butter in a large nonstick skillet over medium-high heat. Add half of the diced peaches in a single layer and cook for 3 to 4 minutes without stirring excessively, allowing golden edges to form.
Add the remaining peaches and cook for another 2 minutes. Stir in 2 tablespoons of honey, brown sugar, lemon juice, and salt. Reduce heat to medium and cook for 8 to 12 minutes, stirring frequently, until the released juices evaporate completely and no watery liquid pools when the fruit is pushed to the side.

Thicken the Peach Filling
Crush about one-third of the peaches using a silicone spatula or potato masher, leaving the rest in distinct pieces. In a small bowl, whisk the cornstarch and cold water until smooth. Bring the peaches to a gentle simmer, pour in the cornstarch slurry, and cook for 1 full minute after it bubbles, stirring constantly. The filling should turn glossy and leave a clear trail when a spatula is dragged through it. Remove from heat and stir in the remaining 1 tablespoon of honey and vanilla.

Cool the Filling
Transfer the hot filling to a pre-chilled shallow metal pan and spread it no deeper than approximately ½ inch. Leave it uncovered for 10 to 15 minutes, until it stops visibly steaming. Place it uncovered in the refrigerator until completely cold, stirring once or twice. Cover with parchment paper only once completely cold.

For Accelerated Cooling:
Cool uncovered at room temperature for 10 minutes. Freeze uncovered for 10 to 15 minutes. Stir thoroughly. Continue freezing for another 5 to 10 minutes, watching carefully. Transfer it uncovered to the refrigerator until it reaches 40°F/4°C or colder. Cover with parchment paper only once completely cold.
➡️Tip: Using a pre-chilled metal quarter sheet pan will make this faster. The shallow layer and exposed surface allow heat and steam to escape, while the metal conducts heat away efficiently.
The filling should not be left at room temperature for more than two hours in total, although this method should cool it far sooner.
Prepare the Pan
Lightly dampen the inside of an 8 × 8-inch square baking dish. Line the dish with two long, crisscrossed sheets of plastic wrap, pressing it flat into the corners and allowing at least 5 inches of overhang on all sides for lifting later.
Bloom and Dissolve the Gelatin
Pour 1 tablespoon of cold water into a small bowl and sprinkle the gelatin evenly over top. Let it stand for 5 minutes until hydrated and spongy. Heat ¼ cup of the whipping cream in a small saucepan over low heat until steaming (do not boil). Remove from heat, add the bloomed gelatin, and whisk until smooth. Cool for 5 to 8 minutes until barely warm but still fluid.

Whip the Mascarpone Cream
Add the cold mascarpone, sifted icing sugar, vanilla, and salt to the bowl of a stand mixer fitted with the whisk attachment. Mix on low speed for 20 seconds to smooth out the mascarpone. With the mixer running on low, slowly pour in 1¾ cups of cold whipping cream. Increase speed to medium and whip until soft peaks form. Whisk ½ cup of this cream into the warm gelatin mixture to temper it, then slowly pour the tempered gelatin into the mixer bowl while running on medium-low. Whip on medium until medium-firm peaks form.

Assemble the Cake
We chose to use a scale for the ultimate precision, but you can also measure by volume to keep assembly simple. Divide your components as follows:
- First Cream Layer: Spread about ½ cup (90 g) of mascarpone cream over the bottom of the lined dish.
- First Cookie Layer: Lay down 5 to 6 graham crackers, breaking pieces to cover gaps.
- Second Cream Layer: Spread roughly 1 cup (180 g) of mascarpone cream over the crackers.
- First Fruit Layer: Spread half of the cold peach filling (about 1 cup) over the cream, leaving a ½-inch cream border around the edge to keep the sides clean.
- Second Cookie: Add a second layer of graham crackers, press gently.
- Second Cream Layer: Add a second layer of mascarpone cream (1 cup (180 g)
- Second Fruit Layer: Spread the remaining peach filling over the cream, leaving a ½-inch border.
- Top Layer: Add a final layer of graham crackers and top with about 1¼ cups (220 g) of cream, smoothing the top flat.
- Reserved Cream: Cover and refrigerate the remaining ½ cup (100 g) of cream to touch up the sides before serving.


Chill Overnight
Fold the plastic wrap overhang loosely over the top of the cake. Refrigerate for at least 12 hours (preferably 18 to 24 hours) so the graham crackers fully soften into tender cake layers.

Toast the Almonds
Add the sliced almonds to a dry skillet over medium-low heat. Toast for 3 to 5 minutes, stirring frequently, until golden and fragrant. Transfer immediately to a plate to cool.
Unmold, Decorate, and Serve
Place the cake in the freezer for 30 to 45 minutes to firm up the edges for clean handling. Untuck the plastic wrap, use the overhanging ends to lift the cake out of the dish, and place it onto a platter. Carefully peel away the plastic wrap and use your reserved mascarpone cream to smooth the sides, optional.

Slice two fresh unpeeled peaches into wedges and arrange them over the top. Scatter with fresh peach slices, toasted almonds, fresh mint leaves, edible flowers, drizzle with honey and serve.
