    Grilled Peach & Tomato Crostini with Whipped Feta. This delightful dish features grilled Furlani Garlic Texas Toast topped with creamy whipped feta, sweet grilled peaches, and savoury blistered tomatoes.

    Using local in season produce makes this a perfect appetizer or side for a long weekend gathering! Combining rich flavours and vibrant colours with minimal effort, this is a family-friendly meal that everyone is going to love!

    Ingredients

    Peach and tomato whipped feta crostini recipe ingredients.
    • Furlani Garlic Texas Toast (16 pieces)

    Blistered Tomatoes

    • Extra virgin olive oil
    • Cherry tomatoes
    • Garlic
    • Kosher salt and black pepper

    Peaches

    • Peaches
    • Olive oil
    • White balsamic vinegar
    • Fresh basil

    Whipped Feta

    • Feta cheese
    • Cream cheese
    • Olive oil
    • Lemon juice

    Instructions

    Make the Whipped Feta

    In a food processor, combine the feta cheese, cream cheese, ¼ cup olive oil, and lemon juice.

    Blend until smooth and creamy. Refrigerate until ready to use.

    Prepare the Blistered Tomatoes

    Preheat your grill to medium-high heat.

    In an 11" ovenproof skillet, add the cherry tomatoes with ⅓ cup olive oil, kosher salt, and black pepper.

    Place the skillet over the heat and cook the tomatoes for 8-10 minutes, stirring occasionally, until just beginning to blister. Add the sliced garlic, stir, and cook for another 5 minutes.

    Grill the Peaches

    Brush the peach slices with 1 tablespoon olive oil and white balsamic vinegar.

    Place the peach slices on the grill and cook for 2-3 minutes per side, until grill marks appear and the peaches are slightly softened. Set aside.

    Prepare the Crostini

    Grill the toast slices for 2-3 minutes per side, until golden brown and crispy.

    Assemble the Crostini

    Spread a layer of whipped feta on each slice of grilled Texas toast. Top with 3 grilled peach slices and 3 blistered tomatoes. Garnish with fresh basil leaves. Serve immediately and enjoy!

    • 1 bag Furlani Garlic Texas Toast 16 pieces

    Blistered Tomatoes

    • ⅓ cup extra virgin olive oil
    • 3 cups small cherry tomatoes
    • 3 cloves garlic thinly sliced
    • Kosher salt and black pepper to taste

    Peaches

    • 5-6 small ripe peaches pitted and sliced (or 4 large) Do not use over ripe/mushy peaches.
    • 1 tablespoon olive oil
    • 1 tablespoon white balsamic vinegar
    • Fresh basil sliced into thin ribbons, for garnish

    Whipped Feta

    • 6 oz feta cheese
    • 2 oz cream cheese
    • ¼ cup olive oil
    • 2 tablespoons lemon juice

    Instructions
