Ingredients
1bag Furlani Garlic Texas Toast16 pieces
Blistered Tomatoes
⅓cupextra virgin olive oil
3cupssmall cherry tomatoes
3clovesgarlicthinly sliced
Kosher salt and black pepperto taste
Peaches
5-6small ripe peachespitted and sliced (or 4 large) Do not use over ripe/mushy peaches.
1tablespoonolive oil
1tablespoonwhite balsamic vinegar
Fresh basilsliced into thin ribbons, for garnish
Whipped Feta
6ozfeta cheese
2ozcream cheese
¼cupolive oil
2tablespoonslemon juice
Instructions
Make the Whipped Feta
In a food processor, combine the feta cheese, cream cheese, ¼ cup olive oil, and lemon juice.
Blend until smooth and creamy. Refrigerate until ready to use.
Prepare the Blistered Tomatoes
Preheat your grill to medium-high heat.
In an 11” ovenproof skillet, add the cherry tomatoes with ⅓ cup olive oil, kosher salt, and black pepper.
Place the skillet over the heat and cook the tomatoes for 8-10 minutes, stirring occasionally, until just beginning to blister. Add the sliced garlic, stir, and cook for another 5 minutes.
Grill the Peaches:
Brush the peach slices with 1 tablespoon olive oil and white balsamic vinegar.
Place the peach slices on the grill and cook for 2-3 minutes per side, until grill marks appear and the peaches are slightly softened. Set aside.
Prepare the Crostini:
Grill the toast slices for 2-3 minutes per side, until golden brown and crispy.
Assemble the Crostini
Spread a layer of whipped feta on each slice of grilled Texas toast. Top with 3 grilled peach slices and 3 blistered tomatoes. Garnish with fresh basil leaves. Serve immediately and enjoy!
