Grilled Peach & Tomato Crostini with Whipped Feta

This delightful dish features grilled Furlani Garlic Texas Toast topped with creamy whipped feta, sweet grilled peaches, and savoury blistered tomatoes.

Ingredients
  

  • 1 bag Furlani Garlic Texas Toast 16 pieces

Blistered Tomatoes

  • cup extra virgin olive oil
  • 3 cups small cherry tomatoes
  • 3 cloves garlic thinly sliced
  • Kosher salt and black pepper to taste

Peaches

  • 5-6 small ripe peaches pitted and sliced (or 4 large) Do not use over ripe/mushy peaches.
  • 1 tablespoon olive oil
  • 1 tablespoon white balsamic vinegar
  • Fresh basil sliced into thin ribbons, for garnish

Whipped Feta

  • 6 oz feta cheese
  • 2 oz cream cheese
  • ¼ cup olive oil
  • 2 tablespoons lemon juice

Instructions
 

Make the Whipped Feta

  • In a food processor, combine the feta cheese, cream cheese, ¼ cup olive oil, and lemon juice.
  • Blend until smooth and creamy. Refrigerate until ready to use.

Prepare the Blistered Tomatoes

  • Preheat your grill to medium-high heat.
  • In an 11” ovenproof skillet, add the cherry tomatoes with ⅓ cup olive oil, kosher salt, and black pepper.
  • Place the skillet over the heat and cook the tomatoes for 8-10 minutes, stirring occasionally, until just beginning to blister. Add the sliced garlic, stir, and cook for another 5 minutes.

Grill the Peaches:

  • Brush the peach slices with 1 tablespoon olive oil and white balsamic vinegar.
  • Place the peach slices on the grill and cook for 2-3 minutes per side, until grill marks appear and the peaches are slightly softened. Set aside.

Prepare the Crostini:

  • Grill the toast slices for 2-3 minutes per side, until golden brown and crispy.

Assemble the Crostini

  • Spread a layer of whipped feta on each slice of grilled Texas toast. Top with 3 grilled peach slices and 3 blistered tomatoes. Garnish with fresh basil leaves. Serve immediately and enjoy!
