Ingredients
Caramelized Onion Base
- 2 lbs (900 g) yellow onions, approximately 4-5 medium
- 2 tablespoon (28 g) unsalted butter
- 1 tablespoon (15 ml) extra-virgin olive oil
- ¾ teaspoon kosher salt (preferably Windsor Kosher salt), divided
- ¼ teaspoon freshly ground black pepper
- 2 teaspoon fresh thyme leaves, divided
- 1 small garlic clove, finely grated or minced
- 2 teaspoon all-purpose flour
- ⅓ cup (80 ml) dry white wine (like Pinot Grigio or Sauvignon Blanc) or dry sherry (do not use cooking sherry)
- ¾ cup (180 ml) good-quality low-sodium beef or chicken stock
- 1 teaspoon sherry vinegar (optional, only if needed after tasting)
Gruyère Toasts
- 8 baguette slices, cut ½ inch (1¼ cm) thick on a slight diagonal
- 1½ tablespoon (21 g) unsalted butter, melted
- 5 oz (140 g) Gruyère cheese, finely grated (approx. 1½ cups)
- Freshly ground black pepper, to taste
Eggs
- 4 large eggs (Take eggs out of the fridge 20 minutes prior to baking.)
- Kosher salt and freshly ground black pepper, to taste
For Finishing the Skillet
- 2 tablespoon finely chopped fresh chives
- ⅛ to ¼ teaspoon piment d'Espelette (or Aleppo pepper)
- Freshly ground black pepper

Instructions
Slice the Onions
Trim the stem end of each onion, keeping the root intact. Halve through the root, peel, and slice lengthwise from stem to root into pieces approximately ¼ inch (6 mm) thick. Discard the roots. You should have approximately 8 loosely packed cups of sliced onions.
➡️Note: Lengthwise slices retain their structure during caramelization, whereas crosswise slices can collapse into a paste.

Sweat the Onions
Melt the butter with the olive oil in a 12 to 12½-inch (30 to 32 cm) ovenproof skillet over medium heat. Add the sliced onions and ½ teaspoon salt; toss to coat evenly. Cover and cook for 10 minutes, stirring once halfway through. The onions will soften, release moisture, and reduce by roughly one-third.

Caramelize Slowly
Remove the lid and reduce heat to medium-low. Cook uncovered for 40 to 55 minutes, stirring every 5 minutes initially, and every 2 to 3 minutes as browning deepens. Scrape the bottom of the skillet with each stir. If the browned bits (fond) turn dark prematurely, stir in 1 tablespoon of water to lift them.
➡️The onions are done when they are glossy, golden brown, jammy, and reduced to about 2 to 2½ cups.

Season and Build the Base
To the caramelized onions, add 1 teaspoon thyme, minced garlic, and black pepper. Cook for 30 seconds until fragrant. Sprinkle the flour over the onions and stir constantly for 1 minute to remove the raw flour taste.
➡️Note: The flour is not intended to make a heavy gravy. It binds the small quantity of stock so the onion base remains cohesive around the eggs rather than separating into broth.

Deglaze and Simmer
Increase heat to medium and pour in the dry white wine or sherry. Scrape up any browned bits from the bottom. Simmer for 2 to 4 minutes until the liquid has almost completely evaporated. Pour in the stock and bring to a gentle simmer for 6 to 10 minutes until no loose broth remains. Drag a spoon across the skillet; the path should remain visible for 2 seconds before closing. Taste and adjust with the remaining ¼ teaspoon salt or 1 teaspoon sherry vinegar if needed for balance.

Prepare the Gruyère Toasts
While the onions caramelize, set an oven rack in the center position and preheat the oven to 400°F (200°C). Arrange baguette slices on a rimmed baking sheet and brush both sides with melted butter. Bake until lightly golden on both sides. Remove from the oven and set aside on a wire rack uncovered. The cheese will be added to the toast after the eggs are cooked.
Set Up the Eggs
Ensure the onion mixture is gently bubbling. Use the back of a spoon to create 4 broad, shallow wells in the onions, leaving a light cushion of onions on the bottom to prevent sticking.
Technique Tip: The Sieve Method: Crack each egg into a fine-mesh strainer over a small bowl first. This drains away the thin, watery outer albumen, leaving only the firm white and yolk. Doing this prevents excess liquid from running over your onions and ensures neat, evenly set eggs. Transfer each strained egg into an individual ramekin.
➡️Note: Holding each egg in its own ramekin allows you to slide all four eggs into the hot skillet in rapid succession so they start baking at the same time and cook evenly. It also gives you better control than cracking directly over the pan and protects the dish if a yolk happens to break.
Gently slide one egg from its ramekin into each prepared well, then season lightly with a pinch of kosher salt and black pepper.

Bake and Finish
Transfer the skillet immediately to the middle oven rack. Bake at 400°F (200°C) for 6 to 9 minutes. Check at 6 minutes; remove when the outer whites are opaque and the inner whites have a slight jiggle. The residual skillet heat will finish cooking them during rest. Rest for 2 minutes. Sprinkle with the remaining 1 teaspoon thyme, fresh chives, piment d'Espelette, and black pepper.
