Grilled Roasted Grape & Brie Crostini

Red seedless grapes, roasted to perfection with olive oil, kosher salt, and fresh thyme, create a luscious topping. A wheel of creamy Brie is melted to oozy goodness on the grill. Drizzled with honey and served on diagonally sliced, grilled baguette, these crostinis are a delightful harmony of flavours.

Ingredients
  

  • Red seedless grapes 3 to 4 grapes per slice crostini
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • 2 teaspoons fresh thyme leaves
  • 1 8oz Brie wheel 226g
  • Fresh baguette cut ½ thick, sliced on a diagonal - 12 to 14 slices
  • Olive oil to drizzle
  • Honey to drizzle

Instructions
 

  • Preheat the grill to 400ºF, only light one side of the grill.
  • Spread grapes into a cast iron pan or skillet. Drizzle with olive oil. Sprinkle with salt and thyme leaves. Toss gently to mix.
  • Place Brie into a second cast iron pan.
  • Place both pans on the unlit half of the grill for 8-10 minutes or until grapes just begin to burst and Brie begins to ooze.
  • Meanwhile, brush the bread with olive oil. When the Brie and grapes are just about ready, grill the bread over direct heat about 1 minute per side.
  • Assemble the crostini. Spread brie over bread, top with roasted grapes and drizzle with honey.
  • Serve immediately and enjoy!
