Perfect for slaws, salads, and all your grilled veggie dishes! Made with a vibrant combination of grated ginger, finely diced shallots, rice vinegar, avocado oil, soy sauce, honey, Dijon mustard, and a splash of lime, this dressing adds a burst of flavour to any dish. Drizzle it over a refreshing SobaNoodle-Slaw or pour it over perfectly Griddled Veggies like Chinese broccoli.Note: The serving size, prep time and cook time are for the dressing only.
Place all of the ingredients in a mason jar. Close the lid and shake vigorously until mixed entirely.
Soba Noodle-Slaw
Prepare noodles as per the package. Once cooked, place in ice water to stop the cooking process. Drain and set aside.
In a large bowl, combine the vegetables and the noodles. Pour in ½ cup of the dressing. Gently toss until evenly coated. Taste and add more dressing if desired. Serve and enjoy!
Griddled Veggies
Heat your griddle or pan over medium heat and add a lug of avocado oil. When hot, add the broccoli, stir, and close the lid to steam for a minute or two. Continue to stir until the veggies have wilted but are still tender and crispy. About 5 minutes in total. Pour over the ginger dressing to coat, stir and remove from the heat. Serve and enjoy!
