    What is Chicken Milanese?

    Chicken Milanese (or Pollo alla Milanese) is an Italian classic consisting of thin chicken cutlets breaded with flour, beaten egg, and breadcrumbs, then shallow-fried until golden brown. Traditionally served with a fresh lemon wedge or topped with a light, dressed salad, it relies on brief, high-heat pan-frying to keep the interior meat juicy while establishing a crisp exterior.

    Ingredients

    Chicken Milanese

    • 2 boneless, skinless chicken breasts, 6 oz to 7 oz (170 g to 200 g) each
    • 1 teaspoon kosher salt, divided
    • ½ teaspoon freshly ground black pepper, divided
    • ⅓ cup (45 g) all-purpose flour
    • 2 large eggs
    • 1 tablespoon water
    • 1½ cups (90 g) panko breadcrumbs
    • ¾ cup to 1 cup neutral oil (such as canola or avocado), for shallow frying

    Apple, Fennel & Parmesan Salad

    • 1 small fennel bulb, 8 oz to 9 oz (225 g to 250 g), fronds reserved
    • 1 crisp red apple (such as Honeycrisp or Pink Lady)
    • 2 packed cups (55 g) baby arugula
    • 1 oz (30 g) Parmigiano Reggiano, shaved
    • 2 tablespoon tender fennel fronds

    Lemon Dijon Vinaigrette

    • 1½ tablespoon fresh lemon juice
    • ½ teaspoon finely grated lemon zest
    • 1 teaspoon Dijon mustard
    • ½ teaspoon honey
    • ¼ teaspoon kosher salt
    • Freshly ground black pepper, to taste
    • 3 tablespoon extra virgin olive oil

    For Serving

    • ½ lemon, cut into wedges
    • Extra Parmigiano Reggiano shavings (optional)

    Instructions

    Make the Vinaigrette

    In a large bowl, whisk together the lemon juice, lemon zest, Dijon mustard, honey, ¼ teaspoon kosher salt, and several grinds of black pepper. Slowly drizzle in the extra virgin olive oil while whisking constantly until the emulsion is smooth. Taste the dressing; it should be distinctly bright and acidic, as the sweet apple, salty Parmesan, and fried chicken will balance it out on the plate. Set aside.

    Prep the Fennel

    Trim the top stalks off the fennel bulb, reserving the tender fronds. Slice the bulb in half lengthwise through the root. Cut away most of the tough core, leaving just enough intact so the layers hold together. Using a mandoline or sharp knife, shave the fennel thin (about 1⁄16 inch / 1.5 mm). Place in a bowl and refrigerate until assembly. Do not slice the apple yet; wait until right before assembling the salad to prevent browning.

    Butterfly, Pound, and Season the Chicken

    Working with one chicken breast at a time on a clean cutting board, hold a sharp chef’s knife parallel to the board and butterfly the breast almost completely through, opening it like a book. Place the butterflied breast between two sheets of parchment paper or plastic wrap.

    Using the flat side of a meat mallet, gently pound from the center outward until the cutlet reaches an even ⅜ inch (1 cm) thickness. Do not pound it super thin; keeping it at ⅜ inch ensures the meat stays juicy under the crisp crust.

    Slice open the chicken breast like a book, then cover with parchment paper and pound until thin.

    If the butterflied cutlet is too large to fit flat in your skillet, cut it cleanly into two separate cutlets. Pat the chicken thoroughly dry with paper towels, season both sides with ¾ teaspoon kosher salt and ¼ teaspoon black pepper, and let sit for 5 minutes.

    Set Up The Breading Station

    Set out three wide, shallow dishes/trays side by side along with a wire rack set inside a sheet pan:

    • First Dish 1: Flour mixed with ⅛ teaspoon kosher salt.
    • Second Dish 2: Eggs and 1 tablespoon water, beaten until completely smooth.
    • Third Dish 3: Panko breadcrumbs mixed with ⅛ teaspoon kosher salt and ¼ teaspoon black pepper.
    Set up a breading station for the chicken  Milanese. One tray with flour and seasoning, one with egg and water and the third one with panko.

    Bread and Rest the Cutlets

    Dredge one cutlet in the flour, tapping off any excess. Dip completely into the egg mixture, allowing excess egg to drip off. Transfer to the panko breadcrumbs, pressing the crumbs firmly into both sides with your palm to coat thoroughly, paying close attention to the edges. Lift and gently shake off loose crumbs, then transfer to the wire rack. Repeat with the remaining cutlet. Rest the breaded chicken on the rack for 5 minutes before frying. This allows the coating to set and prevents the crust from separating in the skillet.

    Heat the Oil

    Pour neutral oil into a 12.5-inch stainless skillet to a depth of ¼ inch (6 mm). Place over medium heat until the oil reaches 340°F (170°C). Test by dropping a few panko crumbs into the skillet; they should immediately sizzle and gradually turn golden, rather than browning instantly.

    Fry the Cutlets

    Gently lay one cutlet into the hot oil away from you to avoid splashes. Fry the first side for 2 to 2½ minutes until deep golden brown. Using tongs and a spatula to support the cutlet, carefully flip and fry the second side for 1½ to 2½ minutes.

    Shallow fry the chicken cutlets until golden brown.

    Insert an instant-read thermometer horizontally into the center of the cutlet; it is done when it registers 165°F (74°C). Immediately transfer to a clean wire rack (not a paper towel) to preserve the crisp bottom crust, and lightly season with a pinch of kosher salt. Skim any loose floating breadcrumbs out of the oil with a mesh skimmer, bring the oil back to 340°F (170°C), and fry the second cutlet.

    Toss the Salad

    Just before serving, halve and core the apple (leave the skin on). Slice the apple thin (about 1⁄16 inch / 2 mm) and immediately toss with half of the vinaigrette to coat with acid and prevent oxidation. Add the shaved fennel, baby arugula, fennel fronds, and two-thirds of the shaved Parmigiano Reggiano. Toss gently until lightly coated.

    Plate and Serve

    Place a hot cutlet on each plate. Pile the apple and fennel salad loosely over the center third of the chicken, leaving plenty of the golden panko crust exposed. Garnish with remaining Parmesan shavings, extra fennel fronds, and a grind of black pepper. Serve immediately with lemon wedges and extra vinaigrette.
