Roasted Sugar Pie Pumpkin

  • 1 sugar pie pumpkin approx. 2 ¾ lb to 3 ¼ lb / 1.2 kg to 1.5 kg (You will need 13 oz / 375 g of roasted pumpkin flesh for the sauce)
  • 1 teaspoon olive oil 5 mL

Lemon & Fennel Turkey Meatballs

  • 1.1 lb ground turkey 500 g ground turkey (preferably dark meat or standard ground turkey, not extra lean)
  • ⅓ cup panko breadcrumbs 20 g
  • 3 tablespoon whole milk 45 mL
  • 1 large egg yolk
  • ⅓ cup finely grated Parmesan cheese 25 g
  • 2 garlic cloves finely grated
  • 1 teaspoon fennel seeds
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • 4 g kosher salt approx. 1 tsp
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoon olive oil, divided for browning 30 mL

Fresh Pumpkin-Sage Cream Sauce

  • 1 tablespoon unsalted butter 14 g
  • 1 medium shallot finely diced (approx. 1 ½ oz / 40 g)
  • 2 garlic cloves minced
  • 1 tablespoon finely chopped fresh sage
  • ⅓ cup dry white wine 80 mL
  • 13 oz roasted sugar pie pumpkin flesh 375 g
  • 1 ¼ cups low-sodium chicken stock 300 mL , plus extra as needed
  • 5 tablespoon 35% heavy whipping cream 75 mL
  • ¼ teaspoon kosher salt plus extra to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 to 2 teaspoon freshly squeezed lemon juice

Crispy Pancetta & Garnish

  • 3 oz diced pancetta 85 g
  • 8 to 10 small fresh sage leaves thoroughly dried
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • ½ teaspoon finely grated lemon zest
  • Freshly grated Parmesan cheese optional

Instructions

Roast the Pumpkin

  • Preheat your oven to 400°F (205°C) conventional bake. (If using a convection oven without a conventional setting, reduce temperature to 375°F / 190°C). Line a rimmed baking sheet with parchment paper.
  • Wash and dry the pumpkin. Cut it in half from stem to base, scoop out the seeds and pulp from the core, then slice each half into two wedges.
  • Note: Some fresh pumpkins often contain light fibrous strands in the flesh. After roasting and blending the pumpkin with warm chicken stock, white wine and heavy cream quickly breaks down those fibers into a smooth, velvety sauce.
  • Lightly brush exposed flesh with olive oil. Arrange wedges cut-side down on the prepared sheet.
  • Roast for 40 to 55 minutes (start checking at 35 minutes). The pumpkin is ready when a sharp knife slides easily through the thickest section without resistance.
  • Cool until safe to handle. Scoop the roasted flesh away from the skin and weigh out 13 oz (375 g). Set aside for sauce; refrigerate any extra flesh for smoothies or soup.
  • Note: Sugar pie pumpkin flesh yields a warm, naturally yellow-golden hue.

Prepare the Turkey Meatballs

  • Heat fennel seeds in a small dry skillet over medium-low heat for 1 to 2 minutes until fragrant. Transfer to a mortar and pestle and lightly crush.
  • In a large bowl, combine panko breadcrumbs and milk. Let stand 5 minutes to form a soft panade.
  • Stir in egg yolk, Parmesan, garlic, crushed fennel, lemon zest, parsley, salt, and black pepper until uniform.
  • Add ground turkey. Gently fold together until just incorporated without overworking the meat.
  • Avoid Overmixing for Tender Meatballs. Overworking ground turkey causes the proteins to bind tightly, making the meatballs tough, rubbery, and dry. Gently fold the ingredients together just until combined so the meatballs stay light, juicy, and tender!
Optional test: Sear a small teaspoon of meatball mixture in a skillet to check seasoning, then adjust to taste.
  • Divide the mixture into 16 equal portions (approx. 1 ¼ oz / 35 g each). Roll gently with damp hands into smooth spheres.
  • Place on a parchment-lined tray and drizzle with 1 tablespoon of olive oil. Brush or roll the meatballs in your hands to coat.
  • Cover and chill in the refrigerator for 15 to 20 minutes to firm up.

Crisp the Pancetta & Sage

  • Place diced pancetta into a cold 3.5-quart sauté pan or 12.5-inch skillet.
  • Set heat to medium-low. Cook for 7 to 10 minutes, stirring occasionally, until fat renders and pancetta turns golden and crispy.
  • Transfer crisp pancetta to a paper towel-lined plate using a slotted spoon.
  • Carefully drop dried sage leaves into hot rendered fat and fry for 10 to 20 seconds, until bubbling stops and the leaves turn crisp. Remove promptly to the plate. If needed, add some olive oil to the pan.
  • Reserve 1 tablespoon rendered pancetta fat in the pan and pour off excess.

Brown the Turkey Meatballs

  • Add ½ tablespoon olive oil to reserved pancetta fat over medium heat.
  • When it shimmers, place 8 chilled meatballs in the pan, leaving space between them.
  • Cook undisturbed for 1 ½ to 2 minutes until a crisp golden crust forms underneath. Gently rotate and brown 2 to 3 sides (5 to 7 minutes total). Aim for golden patches rather than full browning to keep turkey moist.
  • Transfer browned meatballs to a plate (they will finish cooking in the sauce). Repeat with remaining 8 meatballs, adding remaining olive oil if required.

Prepare the Fresh Pumpkin-Sage Cream Sauce

  • Lower heat to medium-low. Leave golden-browned bits in the sauté pan, draining any excess fat beyond 1 tbsp.
  • Melt butter in pan, add diced shallot, and cook for 3 to 4 minutes until translucent (do not brown).
  • Stir in minced garlic and chopped sage; cook for 30 seconds until fragrant.
  • Pour in white wine, scraping up browned bits from the pan with a wooden spoon. Simmer for 2 to 4 minutes until the liquid reduces to approx. 2 tbsp.
  • Stir in 13 oz (375 g) roasted pumpkin flesh and 1 cup (240 mL) chicken stock. Cook for 2 minutes, breaking up pumpkin chunks.
  • Carefully transfer hot mixture to a countertop blender (venting lid) or use an immersion blender. Blend for 45 to 60 seconds until smooth, velvety, and uniform.
  • Consistency adjustment: Stir in remaining warm chicken stock (2 tablespoon at a time) until sauce coats the back of a spoon and flows smoothly. Keep sauce slightly thinner than target consistency, as it thickens while meatballs simmer.

Simmer Meatballs & Finish

  • Place browned meatballs into the simmering cream sauce in a single layer, pouring in any resting juices from the plate. Leave the tops of the meatballs exposed.
  • Reduce heat to low, partially cover pan, and maintain a soft simmer for 8 to 12 minutes, turning meatballs halfway through.
  • Check temperature with an instant-read thermometer inserted into the center of the largest meatball; remove from heat when it reads 165°F (74°C).
  • Remove the sauté pan from the heat. Stir 1 teaspoon of fresh lemon juice directly into the sauce around the meatballs.
  • Taste sauce with a bite of crispy pancetta. Adjust with extra salt, pepper, or lemon juice if needed to lift the pumpkin's natural richness.

Garnish & Serve

  • If serving over buttered egg noodles, warm polenta, gnocchi, or crusty bread, divide your base among warm serving bowls. Ladle the velvety pumpkin cream over top and nestle four turkey meatballs into each bowl. (If serving as is, simply spoon the meatballs and cream sauce directly into shallow bowls).
  • Scatter the crispy pancetta, fresh parsley, lemon zest, and finely grated Parmesan across each portion. Top with the fried sage leaves at the very last moment to preserve their crisp crunch, and serve piping hot straight from the skillet!

Notes

What is Sugar Pie Pumpkin?

A small culinary pumpkin variety bred specifically for cooking and baking rather than carving. They feature sweeter flesh than large decorative pumpkins.
Fresh sugar pie pumpkins naturally vary in flesh colour depending on maturity and growing conditions. Many yield a warm, pale yellow-golden sauce rather than a deep orange. For a deeper orange colour without artificial colouring, use 100% pure canned pumpkin for a richer, deeper hue every time.

Chef Tips & Success Factors

  • Fibrous Pumpkin Resolution: Fresh sugar pie pumpkins contain natural plant fibers. High-speed blending alongside chicken stock breaks down all stringy texture into a velvety velouté consistency.
  • Preventing Dry Turkey: Avoid over-browning meatballs during the initial sear. The goal is surface crusting, allowing the internal meat to cook through gently while simmering in cream sauce.

Substitutions & Variations

  • Busy Weeknight Shortcut: Using 13 oz (375 g) of canned 100% pure pumpkin purée eliminates the pumpkin roasting and cooling steps, slashing 40 minutes off your total time and reducing Inactive Time to just 15 minutes!
  • Canned Pumpkin Option: If short on time, substitute 13 oz (375 g) pure canned pumpkin purée (unsweetened) for fresh roasted pumpkin.
  • Meat Alternatives: Ground pork, ground chicken, or veal work equally well with lemon, fennel, and sage seasoning.
  • Wine-Free Alternative: Replace white wine with an equal amount of low-sodium chicken stock plus 1 extra teaspoon of lemon juice.
