Ingredients
Steak & Shrimp
4strip loin roast medallions8 oz each
Steak rub of your choice
8colossal shrimpsize 6/8, shells removed but with tail on for an awesome presentation
½tablespoonchili oil spreadoptional
½tablespoonavocado oiloptional
Teriyaki Sauce
½cuplow-sodium soy sauce
¼cupbrown sugar
1 ½teaspoonsfresh gingergrated
1teaspoongarlicminced
1tablespoonhoney
1teaspoonsesame oil
3tablespoonsmirin
¼cupwater mixed with 3 teaspoons cornstarch
Instructions
Prepare the Steak
Rub the steak medallions with your favourite steak seasoning and set aside.
Grill the Steak
Place the steaks, fat side down on the upper rack of your cold gas grill. Turn the heat on medium-high heat and close the lid. Cook for 8 to 10 minutes or until the internal temperature reaches 120°F. Open the grill and prepare the teriyaki sauce as per the instructions below. While the sauce is being prepared preheat the sear zone on medium heat. Sear the steaks for about one minute per side until slightly charred. Remove from the grill to a board and let them rest while you grill the shrimp.
Make the Teriyaki Sauce
In a small saucepan, whisk together the soy sauce, brown sugar, ginger, garlic, honey, sesame oil, and mirin. Heat over medium-high heat until the sugar dissolves and the mixture comes to a low boil. Add the cornstarch mixture and simmer until the sauce thickens, about 2 minutes. Keep warm until ready to serve.
Grill the Shrimp
Thread two shrimp onto each skewer, then brush the shrimp with the chili oil spread and avocado oil mixture. Grill for 2-3 minutes per side, until they are opaque and cooked through.
Assemble the Dish
Place a shrimp skewer into each steak, then drizzle the teriyaki sauce generously over the top.
