Ingredients
  

Cajun Corn

  • 3 tablespoons olive oil
  • 1 jalapeño finely chopped (seeds optional for less heat)
  • ½ cup vegetable stock no salt added
  • 3 cups frozen corn kernels or fresh corn kernels if available
  • Black pepper to taste

Low-Sodium Cajun Seasoning (or use 1 tablespoon of your favorite Cajun seasoning)

  • ½ teaspoon + â…› teaspoon paprika
  • ½ teaspoon roasted granulated garlic
  • ¼ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon Aleppo pepper
  • ¼ teaspoon dried thyme
  • â…› teaspoon smoked paprika
  • â…› teaspoon cumin
  • â…› teaspoon salt

Instructions
 

  • Heat the Oil: Place an 11-inch nonstick skillet over high heat. Add the olive oil and let it heat up.
  • Sauté the Jalapeño & Spices: Add the chopped jalapeño and seasoning blend. Stir for 1 minute to toast the spices and release their aromas.
  • Cook the Corn: Add the vegetable stock, frozen corn, and black pepper. Stir well, bring to a simmer, and cook for 15 minutes or until the liquid has evaporated.
  • Serve & Enjoy! Serve warm as a side dish, topping, or mix-in.
