Crisp, golden edges give way to a cloud-soft, pillowy centre bursting with sharp aged cheddar and fresh chives. If you have never baked biscuits directly in a pool of melted butter, prepare to meet your new breakfast obsession.
These quick, no-knead drop biscuits do all their magic right inside the pan. The bottom browning creates an unbelievable savory crust, while the full-fat buttermilk keeps the interior incredibly tender. Split one open while warm, steam rising from the cheesy crumb, stack it high for a breakfast sandwich, or serve a basket warm at dinner alongside a bowl of rich, hearty chili.

  • 2½ cups all-purpose flour 300 g
  • 4 teaspoon baking powder 16 g
  • 2 teaspoon granulated sugar 8 g
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup aged cheddar cheese 100 g, freshly grated, reserve 2 tablespoon (15 g) for topping
  • ¼ cup fresh chives, finely chopped 10 g
  • 1 ¾ cups full-fat buttermilk, well shaken 450 mL
  • 6 tablespoons unsalted butter, melted 88 mL

Instructions

Preheat the Oven

  • Preheat your oven to 450°F (230°C) with the rack in the center.

Prepare the Baker

  • Melt the butter in a small saucepan or microwave-safe bowl. Pour the melted butter directly into the 8 × 8-inch baker, tilting it so the bottom is evenly coated. Set aside.

Combine the Dry Ingredients

  • In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and black pepper. Add all but 2 tablespoons of the grated aged cheddar and all of the chopped chives. Toss gently until evenly distributed and coated with flour.

Add the Buttermilk

  • Pour the buttermilk into the dry ingredients. Using a sturdy spatula, fold gently until the flour is just incorporated. The dough will be thick, very moist, and sticky. Avoid overmixing, as vigorous stirring produces tough biscuits.

Transfer to the Baker

  • Spoon the dough directly into the melted butter bath. Gently spread the dough towards the corners into an even layer without pressing it down excessively. Butter will pool around the edges and onto the surface of the dough; this is expected and creates the golden crust.

Score the Biscuits

  • Using a butter knife, cut the dough into a 3 × 3 grid to create 9 equal squares. Make sure to cut all the way to the bottom so the melted butter flows into the cuts. If the soft dough closes over, run the knife through the cuts a second time. Sprinkle the remaining 2 tablespoon of grated cheddar across the top.

Bake

  • Place the baker in the preheated oven and bake for 25 to 32 minutes, checking at the 25-minute mark.
  • The biscuits are done when, the tops are deep golden brown, the edges are deeply golden and crisp and an instant-read thermometer inserted into the centre of a middle biscuit registers approximately 200–205°F (93–96°C).
  • Tip: If the tops brown too quickly before the center is set, loosely tent with aluminum foil for the remaining baking time.

Rest and Serve

  • Remove from the oven and let rest in the baker for 5 minutes. Run a thin knife along the scored lines to separate. Carefully lift the biscuits to reveal their golden, buttery bottoms and place on a rack. Serve warm!

Notes

Key Baking & Technique Tips

  • Do Not Add Extra Flour: This dough is intended to be very wet and spreadable (similar to a drop biscuit). Adding extra flour will make the biscuits dense.
  • Grate Cheese Fresh from the Block: Pre-shredded packaged cheese contains anti-caking agents that prevent smooth melting. A sharp, extra-aged cheddar brings the best bold flavor profile.
  • Check Internal Temperature: Because butter swim dough is high in moisture, testing internal doneness with an instant-read probe (200-205°F) is much more accurate than relying solely on visual browning.
