Grilled Peaches with Crumble

Grilled peaches with crumble are the ideal summer dessert. They are easy to make, and the combination of warm, caramelized peaches, the crunchy crumble topping and the cool ice-cream is simply irresistible!
This is our summer go-to dessert during peach season. We like to make them in front of our guests by the grill, and they take no time at all to assemble. You can even enlist a guest or two to help with adding the crumble and scooping on the ice-cream.

Ingredients
  

  • 4 medium ripe peaches halved and pitted
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • dash of salt
  • 2 teaspoons light brown sugar
  • 1 cup whole grain granola
  • Vanilla ice cream for serving

Instructions
 

  • Preheat the grill to medium heat (approximately 350°F)
  • Mix brown sugar with granola and set aside.
  • Lightly brush the cut side of each peach with olive oil and balsamic, then give one light grind (or shake) of salt from height. Let stand for 5 minutes.
  • Place peaches cut side down on grill. Grill covered, for 8-10 minutes or until peaches are tender and begin to caramelize.
  • Place peaches in individual serving dishes and sprinkle with crumble.
  • Serve with ice cream (or thick yogurt).

Notes

TOP TIP 🍑

  • Peaches are best to grill when just having ripened. Over ripe peaches will get to mushy and under ripe peaches will have a crunchie texture.
  • In Ontario, local peaches are at their peak of freshness in July, August and September.
